Winter Day’s Cure: Curried Cauliflower and Parsnip Soup

Much like Nurse Ratched, Winter is a cold bitch that can make days seem long and hard. Unlike the Nurse though, Winter can be melted away with a pot of steaming spicy soup. This soup is filled with cauliflower and parsnips, both that will fill you with healthy carbs and vitamin C and all the good minerals that cauliflower and parsnip naturally have. What gives this soup the ability to bring defrost the coldest of cores is the curry spice mix.

The soup takes about an hour to cook and it makes 5 days worth of soup. Perfect for lunches and it reheats like a dream. It’s low fat and high on great carbs.

Curried Cauliflower and Parsnip Soup

Serves 6

Ingredients

  • 1 heaped teaspoon Ginger (Paste or chopped)

Soup Base

  • 2 Onion (Chop into 1.5 inch pieces)
  • 2 Celery Sticks (Chop into 1.5 inch pieces)
  • 2 Carrots (Chop into 1.5 inch pieces)
  • 2 Parsnips (Chop into 1.5 inch pieces)
  • 4 Cloves of Garlics (Diced)
  • 1 Head of Cauliflower (Broken into small florets)
  • 1 Sweet Potato (Chop into 1.5 inch pieces)
  • 1.8l Vegetable/Chicken Stock

Spice Mix

  • 1 teaspoon Garam Masala
  • 1 teaspoon Cumin Seeds
  • 1 heaped tablespoon Tumeric
  • 1 heaped tablespoon Curry Powder
  • 1 Red Chili

Directions

Soup Base
Step 1. Chop the Vegetables and Garlic from the Soup Base Group
Step 2. Put a large pan on a Medium/High heat. When hot add 2 tablespoons of olive oil and then add the chopped veg and garlic. Cover the pot and stir every 5 minutes for 15 minutes until carrots are tender but still firm.
Soup base
Step 3. Put on a kettle with 1.8 liters of water and make the stock.
Spice Mix
Step 4. Add the entire list of spices into the veg and mix so it covers the entire pot of vegetables.
Step 5. Add the stock to the vegetables and leave the pot to simmer for 25 minutes
Step 6. Once the Sweet Potato is tender to the touch use a hand blender/liquidizer to blend the soup into a smooth orange soup.
