Ingredients
- 225g Butter
- 500g Sugar
- 4 Eggs
- 225g Flour
- 100g Cocoa Powder
- pinch Salt
- 340g Smooth Peanut Butter
- 100g Icing Sugar
Directions
Step 1. | Preheat an over to 170 Celsius .Beat Sugar and Butter together until very smooth. Add eggs one at a time and beat until fully mixed. |
Step 2. | Once all eggs have been added, sift in the flour, cocoa and salt. Mix until everything is fully incorporated. |
Step 3. | Line a square baking tin (I used a 20cm tin) with baking paper and add the mixture. Smooth it out until as smooth on top as possible. |
Step 4. | Put the brownie in the over for 25 minutes. Take it out and check it with a skewer. It should come out with a small amount of fudgy brownie on it. You dont want to bake all the fudgyness out of it. |
Step 5. | Leave it to cool in the fridge while you mix the peanut butter and icing sugar together. Put both the peanut butter and brownie in the fridge for at least 45 minutes. |
Step 6. | Cut the brownie in half. Make sure it is cooled completely so it doesn't fall apart during cutting. Add the peanut butter mix to one half and put the other half back on top and press down gently. |
