Ah the Americans….. what a great people they are. They take inventions and turn them up to 11. The Italians brought over pasta at some stage and showed them the elegant beauty of a light cheese sauce on some tagliatelle. The Americans saw this and said yes but what if we could eat it with a spoon and it was topped with bread?… oh and the name needs to change, pasta WITH a cheese sauce sounds like pasta is the key while we see the partnership as more of a Simon and Garfunkel situation, the cheese obviously being Paul Simon in this case.

The Italians sighed and probably threw their hands up while somehow winning a penalty and this lead to MAC’N'CHEESE

Ingredients

Sauce

  • 1l Milk
  • 65+g Flour
  • 450g Cheedar Cheese (Shredded)
  • 450g Elbow Macaroni Pasta
  • 100g Butter

Topping

  • 1 Demi Baguette
  • 1 tablespoon Butter
  • 1 teaspoon Paprika

Directions

Step 1. Cook the pasta to the packets instructions and place the baguette in the oven as you preheat it to 200 degrees.
Step 2. In a saucepan over a medium heat, melt the butter and add in the flour. Stir the mixture together until it thickens up. It should thicken to a custard consistency. If not add in a teaspoon of flour until it reaches a custard consistency.
Step 3. Add the milk in slowly while you continually stir. Once all the milk has been added make sure the butter and flour mixture (called a roux if you are a culinary dickhead).
Step 4. Add the cheese into the pan in handfuls and stir until it melts before you add in the next handful. Do this until the all the cheese has been used. Take the saucepan off the heat and set aside.
Step 5. In a 26cm or 32cm baking dish, place all the pasta and then pour all the sauce in on top. Stir this until all the pasta is covered and place it in the oven for 15 minutes.
Step 6. Break the baguette up into pieces and place it in a food processor. Blitz it until it breaks into breadcrumbs. Add in the tablespoon of butter and the paprika and blitz again for a few seconds.
Step 7. After the first 15 minutes in the oven take the dish out and cover with the breadcrumbs. Put it back in the oven for another 15 minutes or until the top is golden brown.
